Okay, so here goes, another cake made from a cake mix! If I made this cake from scratch, no one would ever know it’s a scratch recipe, or made from a cake mix! This cake is one of my favorites, and I’m not just saying that, it’s true! If you make this cake, you will see, it’s an incredible cake, and one people will be asking for over and over again. This is a different version of my Blueberry Cake, using strawberries instead of blueberries. Which one do I like best? I’d still have to say the Blueberry Cake, but this just as delicious, and just as beautiful, just two different fruits. The icing on this cake is soooo white, the fruit really pops on top! You will have those you make it for, saying it’s among one of their favorites! I hope you enjoy this cake as much as I do! It’s a long time favorite of mine!

Ingredients:
Mix and bake 1 recipe vanilla or butter cake recipe (your favorite scratch) or 1 boxed Duncan Hines French Vanilla or Butter cake mix, and make according to package directions on box. Bake in 2 (9 inch layers) or 3 (8-inch) layers. Cool completely.
Icing:
1 large container Cool Whip (thawed)
1 (8 ounce) package cream cheese (softened)
1/2 cup sifted powdered sugar
1/2 cup granulated sugar
Mix all icing ingredients together and spread between each layer of cooled cake. Spread on top also. When you ice the layers, make sure you ice each layer before putting the strawberries on. You can make a ridge or ring around each layer, this helps hold the strawberries inside the layers. You can use a piping bag for this, or cut the corner of a zip lock bag, filling the bag with icing and then make a ring by squeezing out the icing all around the edge in a circle.
Once the cake has been iced spoon the strawberries on top each section until you get to the top layer. Ice the entire cake and decorate if you want to get a little fancy (not required). Spoon strawberries on top last.
For the strawberry center and topping:
2 cups fresh or frozen strawberries (chopped) (Keep some for decorating top of cake)
2 small or 1 large container strawberry gelatin.
1 small container blueberries
1 small container blackberries
Once the strawberries are chopped, mix with the strawberry gelatin and refrigerate until cold. Strawberries will go on top the bottom layer and the middle layer (if making a three layer cake) before putting the top cake portion on. Make sure you put a ridge around the strawberries, or they will ooze out of the center and bleed through the icing.
* You can put the strawberry filling on top instead of the whole fruit as in the picture. Leave the decorating up to your imagination.
* If you don’t want to make the strawberry topping, you can use a couple of cans of strawberry pie filling.
* This cake is just a great as a sheet cake also.
