How can you go wrong with chocolate and peanut butter in the same cookie! I had a few bags of Halloween (Mini} Peanut Butter M&M’s left-over and wanted to use them up so I decided to use one of my chocolate cookie recipes and add the m&m’s to it. I also had half a bag of peanut butter chips and added those to the recipe also. The end result is a very good chocolate cookie with the crunch of peanut butter throughout each cookie! The photo below was made with Halloween m&m’s, but you can use the multi-color bag of M&M’s instead of the peanut butter.
The color will pop against the chocolate!
Ingredients:
1/2 cup butter (1 stick softened
1/2 cup shortening (I use Crisco)
1 cup creamy peanut butter
1 cup granulated sugar
1 cup packed light brown sugar
2 large eggs
2 and 1/2 cups all-purpose flour
1 and 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
2 cups mini peanut butter m&m’s
1/2 bag peanut butter chips (optional)
Directions:
Cream butter, shortening, peanut butter, granulated sugar, brown sugar and eggs until blended well, then add vanilla.
Stir together (or sift) all-purpose flour, soda, baking powder and salt. Slowly add flour mixture to creamed butter mixture and mix well. Stir in mini-peanut butter m&m’s and peanut butter chips and mix well.
Drop by rounded teaspoons on an ungreased cookie sheet.
Bake at 375 F for 11-12 minutes.
* I line my cookie sheets with parchment paper, and I use a cookie scoop instead of a teaspoon.
