Peanut Butter Cookies

I love peanut butter so much, I can eat it right out of the jar!  I love crunchy peanut butter or smooth, it makes no difference, as long as it’s peanut butter!  The cookies below burst with the flavor of peanut butter, a recipe I’ve been making for years.

If you love peanut butter, this recipe is for you!

 

 Ingredients:

1 stick butter (1/2 cup softened)

1 cup peanut butter (smooth or crunchy)

1/2 cup light brown sugar (packed)

1/2 cup granulated sugar

1/2 teaspoon baking soda

1 egg (large)

1 teaspoon vanilla

1 and 1/2 cup all-purpose flour

 

Directions:

 

Beat butter and  peanut butter until smooth and creamy.

Add brown sugar, granulated sugar and baking soda to creamed mixture and beat well until light and fluffy.

Beat in egg and vanilla.

On low speed-gradually add all-purpose flour and mix well.

Roll heaping teaspoons of dough into 1-inch balls.  Roll in granulated sugar and place on an UN-greased cookie sheet 1 and 1/2 inches apart.

Dip a fork into granulated sugar and press lightly on each cookie ball, then press on cookie ball in opposite direction, making a criss-cross pattern on each cookie.

Bake at 375 F for 10 to 12 minutes.

Makes 2 and 1/2 dozen cookies.
