Here is a cookie I’ve been making since 1973 since I saw it in Family Circle Christmas Helps 1973 magazine. I still have the magazine I got the recipe from. I think this magazine is what started my love for cookie baking. This cookie is a light buttery cookie with a light lemon taste. The cookie press I use is from Wal-Mart made by Wilton, but you can certainly use any cookie recipe you prefer and make them in any shape or color you like!
Ingredients:
1 and 1/2 cups softened butter (3 sticks)
1 cup sugar
3 egg yolks
1 teaspoon vanilla
1 teaspoon lemon extract
1/4 teaspoon salt
3 and 1/2 cups pre-sifted all-purpose flour
Assorted color sugars or sprinkles
Directions:
Beat butter, sugar and egg yolks in a large bowl at high-speed until light and fluffy.
Blend in vanilla, lemon extract and salt. Stir in flour gradually to make a soft dough.
Fit a disk into cookie press and fill with dough. Press onto UN-greased cookie sheets.
Sprinkle with colored sugar or Christmas sprinkles.
Bake 375 F for 8 minutes. Remove to a wire rack and cool.
