Egg Custard Pie

 

Ingredients:

 

1 (9-inch) UN-baked pie crust

3 eggs (beaten)

3/4 cup white sugar

1/4 teaspoon salt

1 teaspoon vanilla

1 additional egg white (use to brush pie crust with)

2 and 1/2 cups scaled milk (cool slightly)

1/4 teaspoon nutmeg  *optional

 

* optional help: scald milk until you starts to see bubbles around the edge of pot. 

 

Directions:

 

Brush bottom and sides of a 9 inch pie crust with egg white to prevent pie crust from being soggy.  Set aside.

Mix together eggs, sugar, salt and vanilla and mix well.  Slowly add scalded milk a little at a time, mixing well with a wire wisk.  

Pour custard into pie crust, sprinkle with nutmeg and bake at 400F for 40-50 minutes or until a knife inserted in the center comes out clean. 

*If pie crust edges start to brown too much, cover with foil or pie crust cover.

Cool on wire rack.

    • I’m so sorry I did not get back to you before now, we had a death in the family and the holidays were a bit crazy. I’ve not even had time to update with any new recipes. Anyway, you cake the pie at 400 F for 40 to 50 minutes. So sorry I was not able to get back to you before now. I hope your holiday was a good one as well as the New Year! Rosetta
