This is a recipe that lets you indulge in something sweet without the guilt. Each fudge square has only 65 calories and only 1 gram of fat.
Ingredients:
1 box fudge brownie mix (18.3 ounce)
2 cups canned pure pumpkin (1 can)
2 Tablespoons light chocolate syrup
2 Tablespoons reduced-fat peanut butter, softened
Directions:
Preheat oven to 350 F. In a large bowl, combine pumpkin with brownie mix, mix till smooth. Add chocolate syrup to the batter and stir until blended.
Batter will be very thick, but don’t add anything else!
Spray a square baking dish or pan (9 x 9 inch works best) with non-stick cooking spray. Spread the batter evenly into the pan.
Warm peanut butter in microwave until softened, about 20 seconds, then spoon peanut butter on top and use a knife to swirl it around.
Bake in the oven for 35 minutes. The batter will remain very thick and fudgy, it should look under-cooked. Allow fudge to cool, then cover the pan with foil and refrigerate for at least 2 hours.
Cut into 36 squares. Then get ready for the fudge frenzy!
Per serving (1/36th of recipe, 1 piece): 65 calories, 1 gram of fat, 57 mg sodium, 13.5 carbs, 0,5g carbs, 0.5g fiber, 9 g sugars. 0.5g protein.
