“Love Me Knot” Lemon Cookies

**I’ve been making these cookies for over 35 years, I’m not sure where I got the recipe. They are a little time-consuming but so worth the time.  The center of the cookies can be colored different colors (which look pretty), but I prefer the yellow center.  The photos below show the step by step “by hand” cookies, and below at the bottom, the cookie cutter version.  The cookie cutter version was made with happy faces in the center. 

 

Ingredients:

 

3 cups sifted all-purpose flour
2 -1/4 teaspoons baking powder
1/4 teaspoons salt
…3/4 cup sugar
1/2 cup shortening
2 eggs
2-1/2 Tablespoons milk
1/2 teaspoon vanilla

Sift together flour, baking powder and salt and set aside.

Cream sugar with shortening.

Beat together eggs, vanilla and milk and mix well.

Slowly add egg mixture to shortening and sugar mixture.

Mix in sifted ingredients and mix well.

After mixing, dump dough out on board and knead dough until smooth.

 Roll out 1/4 inch thick; cut into circles with a biscuit cutter.

Cut into 6 equal triangles and shape each section into petals, leaving 1/8 inch between each petal and place on an Un-greased cookie sheet.

Cut leftover dough with a tiny lid from the lemon extract or vanilla bottle.

Place one circle in the middle of each flour. Bake 325 for 15-17 minutes.

“Love Me Not Icing”

2 cups sifted confectioner sugar
2 teaspoons lemon extract
3 Tablespoons milk
Combine all ingredients.

Dip each cookie and place on rack to dry.

With extra icing, color it yellow. Use your finger to dip into icing and then dot the center of each cookie to make the it yellow.

Allow to dry before storing away.

Tip:  I always add a little more milk than recipe calls for. 

Tip: To make it easier to dot the centers of the cookies with the yellow icing, I add a little more confectioner sugar to make it thicker, it’s easier to dot the center, and it helps to keep the icing from running into the white.

 

 

 If you don’t want to take the time to make the cookies by hand, you can use a cookie cutter in a flower shape, the will still look good, but to me, the cookies look better made by hand.  Below is some I recently made using a cookie cutter. I put the smily face in the center
