Festive Coconut Macaroons



4 egg whites

2/3 cup sugar

1/4 all-purpose flour

1/8 teaspoon salt

1/2 teaspoon almond extract

4 cups coconut

1/4 cup chopped red candied cherries

1/4 cup green candied cherries.


Grease and lightly flour cookie sheets. 

In a large bowl, beat eggs whites until foamy.

Add sugar, flour, salt and almond extract and blend well.

Stir in coconut and red and green candied cherries.

Drop onto greased and floured cookie sheets by Tablespoons 2 inches apart.

Bake 325 for 13 to 17 minutes.  Yeild 24 cookies
