1 cup butter
½ cup milk
1 cup sugar
1 cup coconut
1 and ½ cup crushed graham crackers
1 cup chopped pecans or walnuts
Cover bottom of a 9 x 15” pan with whole graham crackers. Melt butter on low; add milk, sugar and 1 egg (slightly beaten). Cook till bubbly: 1 – 2 minutes. Add coconut, nuts and 1 and ½ cup crushed graham crackers. Spread over graham crackers and then add another layer of graham crackers, cool and then frost.
2 cups powdered sugar
½ cup butter
Enough orange juice to make a spreading consistency.
Mix together till smooth and chill overnight and cut in rectangle bars.
* I like more icing on mine than what the recipe calls for, so I double the recipe.
* I also add 1/4 teaspoon orange extract to the icing for a more orange flavor.
